Is it possible to filter/sort my Collection to just show Co-op games? Looking at the Filters and Columns settings, nothing about Co-op was jumpin' out at me. But, of course, that doesn't mean it wasn't right there and I just didn't see it.

I don't think you can do it from your collection overview. But:
In the search box of BGG (top of the page, right) pick "Advanced Search". Now use the following options in the search form:
Filter by collection: owned
Specify user: should contain your user name
Optionally: filter expansions
Board game mechanic: cooperative game
Then submit.
